I was looking for something to eat with a bottle of Coppo Passione Brachetto d'Acqui for a romantic treat for my husband and I, and this fit the bill perfectly. It is also delicious with Lindemans Framboise Lambic. Modified slightly from Gourmet; I had everything in my fridge/freezer already! Thank goodness for that monstrous bag of semi-sweet chocolate chips I had on hand for making cookies. I was worried it wouldn't work in this little heart-shaped baking dish I have, but it was just perfect. It is better if made a day in advance.

This is so much better when made with cabbage and potatoes straight from the ground. Most people I know use just a couple of tablespoons of spicy or hot sweet mustard, but I just use regular yellow mustard (and more of it) due to personal preference. I also use a lower fat pork & alligator sausage from Winn-Dixie that might not be available everywhere. I'm sure it would work with any kind.

This is the first meatloaf I ever made! I found the original on Kraft's website, but subbed jalepenos for green peppers (which I do not like) and added some onion and mushroom.

This is by far my favorite "main dish" casserole I made this year using some of my overabundance of squash from my first vegetable garden. It's creamy, delicious and, best of all, easy.
