    These tuna wraps were inspired by spicy tuna sushi rolls. We love how they taste with peppery watercress, but other greens, such as arugula, romaine, escarole or even radish sprouts, would taste great in the filling. If you want to play on the sushi inspiration, stir some wasabi into the soy sauce for dipping and serve with pickled ginger. Serve with sliced cucumbers and slivered red onions tossed with rice vinegar, a little oil and a pinch of salt.

    This recipe is so simple and wonderful, and it can feed a large crowd! Sometimes I half the recipe and just use the pintos and corn, and leave out the hominy and kidney beans, and half everything else, If it is just my and husband and I eating! It is so yummy! I add cheese and sour cream afterward, therefore it is no longer vegan for me, but you can use the fake stuff if you are vegan. I also used the same pot to saute everything and just added everything else in. Who wants to mess up another pan! Found this recipe from vegweb.com

    Chicken-fried doesn’t actually have chicken in it; it’s a cutlet, battered and fried in a skillet like fried chicken, hence the name. A very healthy version and my meat eating husband ate all of his so this is definitely a keeper. Taken from www.chowvegan.com
