OPTIONAL TOPPING: I like to make a small amount of glaze with powdered sugar, maple syrup, and water. I drizzle it on and top them with some chopped walnuts for crunch.

    This is a really basic stir-fry that I found on "recipes for health". Simple flavors, few ingredients, healthy.... I like to serve this over quinoa but you could use rice or noodles with equal success. When browning the tofu, I add some extra chili paste and fresh ginger to the pan for flavor. After it's done and draining on paper towels, I sprinkle it with some kosher salt. The result is far from bland tofu! It's also good to keep some extra soy sauce and hot sauce on the table so that eaters can season to taste. Also, freezing tofu and then thawing it before you cut it up gives it a chewier firmer texture that I really enjoy.... Cheers to healthy eating!

    An amazingly chewy, fudgy brownie! Not for folks who like their brownies more cake-like. I found this recipe on while searching for a recipe that used baking squares instead of cocoa powder. The result? A brownie that is super easy to make and comes out perfectly every time! I like to add a pinch each of baking powder and baking soda but it's not necessary especially if you can beat the egg/sugar mix for 10 minutes...
