A very simple and delicious salsa. In fact, the hardest part is cutting the mango. If cutting mangoes vexes you, do a google search for "how to cut a mango". There are some good videos out there on this technique.
I like this over black bean burgers. It's also perfect on grilled fish or chicken.
I got this one from "The Best Recipe" by Cook's Illustrated. It's a very easy way to make brown rice that comes out perfect every time. No more sticky, clumpy, waterlogged goop! This rice is tender and separate and delicious.
Notice that the ratio of water to rice is much less than the oft-quoted 2 to 1. This is the key to this recipe, so make sure to measure carefully.
Makes a four-inch pan of nice, fluffy white basmati rice. I have only tested it with white basmati rice, but I suspect it would work well with other types of white rice. I adapted this recipe from the book The Best Recipe.
