    BEST BURGER SAUCE. No pickles in the sauce. Its tangy and mmmmmmmmmmmm... I got drool on my keyboard. Oh yeah and it's pink. :D From the cookbook The Good Stuff: After reading several books and articles on Americans and the hamburgers they love, my mother found that people's favorite sauces were different takes on Thousand Island dressing (ketchup and mayo). At one of our family tastings, Mike Colletti, a chef I met Le Cirque, and I came up with our twist on it--we locked ourselves in the kitchen and added a little something to the sauce to give it a real kick.

    THIS IS EPIC ON BURGERS/SANDWICHES. YOU MUST MAKE THIS. From the Good Stuff Cookbook by Spike Mendelsohn: In France, they used to make fun of me about my love of Hellmann's, but if you ask me, it's pretty damn good. If you want to go the extra mile, though it doesn't get any more basic than this recipe. This is super simple and the results are amazing. I have used canola and apple cider vinegar in a pinch. Always a great recipe! Makes burgers AMAAAAZZINNG. It is really rich so I don't use much at all. Using less of the homemade stuff rather than a ton of ikky store bought light or non fat mayo... It really makes a difference. I feel like what I am eating is better quality so moderation is my guide.

The cream smooths out the lobster flavor without obliterating it. Smoked paprika has a deep, intense flavor that makes this combination both complex and delicious. Pull out this rich, flavorful soup for special occasions. For a twist on the lobster bisque, serve it in coffee cups, topped with frothed milk (use and immersion blender), call it "lobster cappuccino" that's sipped from a cup. Don't be intimidated by buying whole lobster! Get your money's worth by saving and/or freezing the shells for stock! If you can't use whole lobster, you can use shrimp instead for a less expensive alternative. (picture is w/out bisque poured around it yet)

Plus, you can employ many different cooking techniques to both the tomato and fennel. Use them both raw for a fresh salad with a Dijon fennel seed vinaigrette. Roast the tomato and fennel and season them with mustard seed for a brothy soup. Puree all three ingredients for a creamy soup. Or go the route of the application recipe and season a braised lamb dish with this ingredient combo. These flavors are well suited to fish, chicken, beef, or lamb. This dish needs several hours in the oven so start early if you plan to eat it the same day you cook it. Serve these shanks in a shallow bowl with something such as polenta to absorb the delicious braising liquid.

    A green salsa is made from serrano chilies, green tomatoes, cilantro, and lime juice. Salsa verde is wonderful with seafood. If you can't find green tomatoes, use ripe red tomatoes. Make a double batch and serve it with corn chips, toasted pita wedges and/or a fresh cheese platter. It's also terrific over chicken or fish.
