For garlic lovers. This recipe makes both garlic-infused oil and creamy roasted garlic cloves at the same time. The roasted garlic oil can be used on salads, boiled red skins, baked potatoes, sauteeing, frying eggs, as a finishing drizzle on pasta and pizza, etc. And the cloves are delicious spread on bagels, toast, crackers, eng. muffins, in cooking.
You can use already-peeled garlic cloves from the grocery store.
Tuna patties are milder than salmon. And the flavor of the other ingredients shine through the tuna. Serve them on a plate with pan-fried potatoes and sliced tomatoes and avocados. Or in a toasted pita with lettuce, thin sliced tomatoes and a touch of mayo. Don't forget a handful of potato chips.

This frittata takes only six ingredients usually found on hand. It's so easy to put together. Though I've only made it with Jarlesberg Swiss, you can use your favorite cheese(s) such as fontina, mozzarella, provolone, jalapeno jack, asiago; or a combination of a couple. Stays spreadable even straight from the refrigerator. Try it on acorn squash, sweet potatoes. This is delicious on french toast, regular toast, waffles; it's especially good on corn bread. Italian plum jam is my favorite. Sometime I have too many plums to eat out of hand, but not enough to make a whole batch of jam. This recipe uses about 18-20 plums and a half package, dry low sugar pectin. Do not use overly ripe plums.
A very tasty, and tender seitan is produced. You can change the taste by the changing or adding different spices. eg. adding traditional chicken herbs like sage, poultry seasoning will produce a mock chicken. Found this recipe on-line.
A not too sweet and almost foolproof spice apple cake. You can also make this in a bundt pan. But I think the springform round cake shape seems appropriate for this cake. Optional spices can be added like cinnamon, nutmeg, cardamom, a pinch of ground cloves, etc.
