Better than the original. The secret, as usual, is in high quality, local, fresh, organic ingredients.

    Recipe #517182

I'm trying to find more ways to barbeque tofu instead of meat. This recipe, adapted from vegetarian.about.com, has the tropical taste I was after.

    Recipe #475102

Adapted from the _Lip Smakin' Vegetarian Backpackin'_ cookbook. "Ranger Rick", the contributing backcountry gourmet, says "I make this in big batches and eat it almost daily on or off the trail. The dried fruits and nuts can, of course, be varied to your taste." I adapted his ratio of 3c grains to 2c nuts to 2c seeds to 3c dried fruits to my tastes and began eating it almost daily as well. At home I like it mixed with blueberries and french vanilla yoghurt; at work, I replace all the nuts with soy nuts (many of my co-workers and students have nut allergies) on the trail, I mix 1/2 a cup of the muesli with a package of flavored instant oatmeal and hot water.

    Recipe #462793

I used to wake up the the smell of my daddy baking fresh scones every weekend. So homey! :D

    Recipe #61340

I'm ashamed to admit an unhealthy predilection for Starbucks pumpkin scones -- they have way too many empty calories and the icing is enough to induce diabetes -- so I found a copycat recipe and modified it to add fiber and lower fat & sugar.

    Recipe #497788

Ger makes the best Brown Bread and I finally got the recipe (and promptly modified it to pair down the ingredient list and raise the percentage of whole wheat flour). I might try this with 100% ww flour next.

    Recipe #497761

Rice and beans for breakfast! No wonder I enjoyed Costa Rica so much :D

    Recipe #475109

I Had a craving for healthy and hearty banana pancakes. I Couldn't find what I was looking for so I used a Canadian Living recipe as a scaffold and modified to my tastes. The results were fantastic! :D

    Recipe #473684

One of our more sinful concoctions... best made with fresh, organic, and local ingredients...

    Recipe #458724

Had an eggplant (which I never cook with) and some miscellaneous squash in the fridge. Wanted to make the vegetable stew I had enjoyed so often in Egypt but all the recipes I could find were too much like Greek mousaka (layers, white sauce etc.) so I experimented and came up with this.

    Recipe #325205

A hearty morning meal. I like these topped with fruit compote or rolled up with sausage & maple butter. Add more liquid to make thinner, larger "crepes".

    Recipe #248958

Takes a bit of prep time chopping all the ingredients but totally healthy & delicious as an appie or Friday Finger Foods. Adapted from Cooking Light magazine.

    Recipe #248933

    modified from athens' recipie

    Recipe #77426
