These are one of my favorite dishes to make as everyone loves them and they are pretty easy! I would highly recommend checking out the balsamic basil oil from tastefully simple as that is the one I love to use (for many recipes) however in a pinch, using regular balsamic vinegrette + evoo is fine too.

I love zucchini and both my boyfriend and I agree that this is the best zuchinni side dish I have ever made! Tons of flavor, healthy and super easy. Note: I was drinking a glass of wine while making this, so figured I'd throw a splash in LOL I personally think it made quite a difference.

I originally was going to make an Asian Salmon recipe that I saw on Barefoot Contessa, however after reading the reviews, I decided against it. Instead, I improvised by changing some of the ingredients, cooking time and style. It ended up coming out fabulous! I love this since it's healthy, full of flavor and incredibly easy.

Easy low-fat way to make baked haddock with tons of flavor! I love baked haddock but my body does not love all of the calories that go along with the rich flavor, so I decided to try a new twist and it's even better. It's fairly easy though there are a lot of ingredients (Which can be removed depending on taste...the most important part is the tomato cilantro fish and scallions!). The presentation of the fish is beautiful with the red and green colors against the breadcrumbs.
