Spinach Salad With Feta and Nutmeg
    Handle

This is what I love about finding new recipes - finding flavors that you never thought would go together - like, spinach and nutmeg! This is a great, simple fresh spinach salad.

    Recipe #418457

    Select
    Quinoa and Spinach Salad
    Handle

From "How to Cook Everything Vegetarian" by Mark Bittman. So easy, so good, so healthy and remarkably filling.

    Recipe #415855

    Select
Royal Fusilli With Asparagus and Peas
    Handle

This spring I was looking for recipes to use the abundant asparagus we had from our garden and stumbled across this one. It's one of my favorites, and I make it all the time. It's really easy, and very yummy. A great spring lunch item, potluck item or party food (think baby shower or bridal shower). If you have picky eaters, leave out the chili pepper flakes. If you're not sensitive to goat cheese, I sometimes add some of that as well.

    Recipe #431336

    Select
    Summer Corn Salad
    Handle

This is ridiculously easy, tasty, and good for you. It's is a great allergy-free option for barbecues and potlucks! Use it as a side (great substitute for cole slaw), or omit the peas and use it as a chip dip for corn chips.

    Recipe #422140

    Select
    Sweet Potato and Quinoa Salad
    Handle

This salad was a pleasant surprise, during an experimenting with more earth-friendly forms of protein. It's free of most allergens, very tasty, good for you, and easy!

    Recipe #415778

    Select
    Warm Lemon Pepper Chicken Salad
    Handle

This is a great weeknight gluten and dairy free dinner. Very quick and tasty. I found it in the Pampered Chef 2011 Calendar. TIP: If you can't find gluten-free lemon pepper seasoning, substitute, 2 tsp lemon zest, 1 tsp black pepper 1 tsp sugar and 1/2 tsp salt.

    Recipe #476732

    Select
    5 Spice Beef & Rice
    Handle

This recipe came from my husband's grandmother, and we modified it a little bit to make it gluten and dairy free. As a kid this was my husband's favorite meal, and he used to walk around singing a little song about it "5 Spice Beef and Rice, Cha Cha Cha!" The five spices are pepper, bay leaf, garlic, thyme and oregano. It's very easy to make, and a good dinner staple.

    Recipe #309594

    Select
    Sugarless Oatmeal Banana Cookies
    Handle

This recipe came from a woman in my book group who was breast feeding and was following a strict breastfeeding diet, low in processed sugars. The ingredients and easy to find (often not requiring an extra trip to the grocery store), and the recipe is very easy to make. Only tip is to eat them soon after coming out of the oven, or reheat them if you are eating them later. They are a little spongy. Otherwise, they are a great, healthy, gluten-free and dairy-free treat! In contrast to what bacon girl said, pure oats are indeed gluten-free. Recipe #297103

    Select
    Summer Squash Skillet
    Handle

A delicious way to prepare all of those summer squash from your garden you don't know what to do with! We got this recipe from "Simply in Season", a Mennonite cookbook featuring recipes for every season of the year. We added chicken to make it a complete meal instead of a side dish.

    Recipe #415228

    Select
Rigatoni With Italian Sausage, Peppers, and Onions
    Handle

I know it's difficult to think of making your own pasta sauce when you can get one easily out of a can - but believe me - this is worth it! It's not even difficult, and so impressive, fun, colorful and filling. You can even prepare the sauce in advance and rewarm it when you're ready to cook the pasta.

    Recipe #447002

    Select
    Apricot-Glazed Chicken
    Handle

A sorority sister gave me this recipe as a "cooking for two" wedding gift. It's easy, and so tasty.

    Recipe #297139

    Select
Beef Stir-Fry With Asparagus, Red Bell Peppers and Caramelized O
    Handle

A great summer dish with fresh, local and organic ingredients! Do not be fooled by the long list of ingredients. This recipe is very easy and incredibly tasty, inspired by the sharp, tangy flavors of Asian cooking. A wok would be ideal, but a good skillet or saute pan will do the trick. Serve this dish with plain or white rice.

    Recipe #418508

    Select
    Southwest Tuna Casserole
    Handle

This came from a friend of mine during a recipe exchange. I amended it significantly to make it gluten and dairy free, but I think it still works! It's a super easy dinner recipe for your average night.

    Recipe #388419

    Select
Roasted Sweet Potato Salad With Red Pepper Vinagrette
    Handle

I LOVE sweet potatoes, and this is quite possible the most brilliant combination of flavors with sweet potatoes I have ever seen. Unlike a traditional potato salad, which is best chilled, this is best served slightly warm or at room temperature. It's a delicious paring with just about anything southwestern, but also goes well with salmon.

    Recipe #436221

    Select
    Butternut and Feta Risotto
    Handle

A college friend of mine who moved to England recommended this, as it was her and her housemate's favorite. Very very good, and creamy. (Hint: it is generally easier to cut the butternut into rough slices, removing the seeds, then slice it more finely after it's cooked. Peeling and chopping raw butternut is rather difficult unless you have a very good knife.)

    Recipe #415339

    Select
    Carrot Souffle
    Handle

My grandmother made this at every family gathering when I was growing up, it was the only way she could get me to eat vegetables! It's always a favorite among picky children. The final product tastes a lot like a sweet potato pie, but we always used it as a side dish to a main meat dish (especially good with turkey or steak).

    Recipe #386699

    Select
    Shepherd's Pie
    Handle

I amended a Weight Watcher's recipe to be gluten free and egg free. Below is the result.

    Recipe #432748

    Select
    Gluten-Free Blackberry Crumble Pie
    Handle

We have an abundance of blackberries on our farm in July. I took an old Mennonite pie recipe, a crumble recipe and a gluten-free crust recipe and combined them to make this delicious seasonal dessert. If you're doing Weight Watchers, each piece of pie is 9 points.

    Recipe #432754

    Select
    Allergy-Free Swedish Meatballs
    Handle

Adapted from the Whole Foods Allergy Cookbook. The original recipe calls for Ener-G Egg Replacer, but since I don't have an egg allergy I added in mayonnaise instead. I find this recipe a suitable alternative to the classic Swedish Meatballs.

    Recipe #426423

    Select
    Cincinnati Chili
    Handle

My brother-in-law made this for a family occasion. It was SO good! I couldn't get enough of it. I wouldn't have thought to put cocoa in chili, but it gives it an indescribably delicious, mellow taste. Typically, Cincinnati chili is served over spaghetti noodles, but there are lot of other ways of garnishing it as well, such as adding shredded cheddar cheese, sour cream, chopped tomatoes and/or green onions to the top. However, if you want to keep it gluten and dairy-free it's delicious by itself as well!
