Delicious healthy oatmeal cookie treats! revised from the back of Old wessex oats recipe

    Recipe #459161

I found a similar recipe on another site, but am really curious as to nutrition values as I make this ALL the time. Its a little different every time I make it, but i'll post the most usual recipe. I portion it out and freeze the leftovers .. makes for delish lunch or quick dinner! Can really make it your own, and honestly you cannot taste the pumpkin. ( I made this for my mom and her beau, who turns his nose up at anything healthy, and he LOVED it!) I usually use 1 lb of ground chicken breast, but today I made it with 1.5lbs of shredded chicken. I have to say, I LOVE it with the shredded chicken. would make a great sandwich! When done, top with some fat free greek yogurt and salsa! YUM! serve over brown rice or with bread!

    Recipe #410624

So easy, delicious and healthy! I use unsalted natural peanut butter, and splenda... I am considering using a natural chocolate peanut butter blend i have found. Just found recipe today on and tried 2 batches ... one with baking soda and vanilla, one without. I prefer one without...more gooey and less crumbly. I also put about 1/3 of a cup of oats in my non baking soda batch...i would have put vanilla in but I realized I forgot the vanilla...oops. I got 16 cookies using a tablespoon to measure out dough balls.

    Recipe #387443

Recipe adapted from Eating Well magazine. I have made a few changes to suit my taste and needs. These bars really are easy and delicious!!!! And can really be changed to add any kind of fruit or nut you like... very versatile!! I find the bars hold up much better if they stay refrigerated. Great for a pre-workout snack...! *can add up to 2 cups dried fruit* I have used dried blueberries and raisins.
