Every region in India has its own version of Kadhi. There is Punjabi kadhi, from the state of Punjab, which is made with gram flour dumplings and has a distinctive strong flavor, and is pretty much made that way all over the North of India, and there is Gujarati kadhi, from the state of Gujarat, with a mild sweeter flavor and is made without any dumplings in it, then there is moru curry in the south which has ground coconut as thickening agent and may or may not have some gourd in it. Whichever way you make it, Kadhies are a delicacy. My version of Kadhi is a combination of Punjabi and Gujarati kadhies. My mom's recipe. And it is awesome. I love this one as I found Punjabi Kadhi a bit too overpowering and Gujarati Kadhi too sweet and mild, this is an awesome combination! Enjoy

Kerala is one of the south Indian states of India. Coconut is a main ingredient in almost all the recipes belonging to this region. Sometimes it is used scraped, sometimes as a paste, sometimes the milk of coconut is extracted and added to the dish and some other times it is dry roasted and then ground into a paste before adding it to any dish. Each way of adding coconut gives a distinctive flavour to the dish. Here in this curry the coconut is roasted and then made to a paste before finally adding it to the gravy.

Dum Aaloo is a very traditional North Indian dish(Uttar Pradesh) wherein baby potatoes are cooked in a spicy gravy. It is eaten with any of the Indian breads as the gravy is not so thin so that you can have it with rice. But if you want to have it with rice you may just increase the liquid in the sauce and adjust seasoning and it is just as much tasty.

Not for weight watchers this one... This recipe elongs to the northern Indian state of Uttar Pradesh, and is eaten with phulkas/chapaties. This vegetable has to be cooked very carefully. Adding water while cooking will spoil the whole vegetable. Choose small okra for this as it is cooked whole.
