    Another muffin that I made for my mom for mother's day. Came up with this using what I had in the kitchen. Turned out pretty yummy! Recipe makes 6 medium sized muffins. Cooking time does not include soaking the figs.

    Made this for my mom as a mother's day gift. Muffins are dense (the way I like them) and not too sweet. Brown sugar can be replaced with splenda.

    Yummy blueberry pancakes using a pancake mix. Low fat and not very sweet. If you don't want to use a mix you can always use 1/4 cup of unbleached whole wheat flour with a pinch of baking powder, baking soda, and salt. I also add in a teaspoon of powdered fiber supplements to my batter to help me get more fiber into my diet. It probably makes no difference to the pancakes though.

    Yay I cooked by myself for the first time today! Decided to start with something easy and yummy :) (and of course, healthy). Made this looking at recipe #102960, but made a few adjustments. Writing the recipe down so I don't forget. Recipe makes 8 big servings, with 230cal per serving. *Edit* The soup gets really thick as it cooks or sits overnight because of the rice, sort of like a risotto. If you don't like the texture, replace brown rice with wild rice or other grains. The only reason I used brown rice instead of wild rice is because I couldn't find any where I live.
