    I know "skirt steaks" may seem a little tricky to find, but please make this note : in Texas, skirt steaks are referred to "beef skirts" or "fajitas". My mom used to make beef fajitas occasionally. We loved it! Now I make it for my family. This recipe is great because it can be done inside without an indoor griller. What I love about it is the peppers and onions soak into the meat and give it a great flavor. It's also versatile so you can add your own vegetables and toppings, such as sour cream and/or guacamole.

    My best friend's mom used to make spaghetti using a thick, meaty sauce. It's easy and very simple, which is what I like about it. The best thing about this recipe is you can use beef, turkey, or even vegetarian meat-substitute crumbles.

    This spicy guacamole goes GREAT as an appetizer with chips or as an accent to main dishes, such as fajitas, etc. The jalepenos really give it a spicy kick! I find it best to buy avocados when they're green and ripen them myself. The credit for this recipe goes to my sister. It took a LONG time for me to get this recipe from her; hope you enjoy it.
