    The perfect summer lunch served over a bed of baby spinach! It makes a TON so is perfect for a party, or for prepping a week's worth of lunches at one time. Add more quinoa if you'd like - 1 cup for this whole recipe isn't much.

    These little candies have become a staple in my annual Christmas baking, though they are so simple, all you need is a microwave! They literally melt i your mouth and will be adored by any chocolate+PB lover! You can easily change the quantities as the white candy, chocolate candy, and peanut butter are used in equal amounts. I use Wilton brand candy melts but you could probably use chocolate chips or almond bark as well.

    One of my favorite recipes is my aunt's Chicken Stuffed Shells. Unfortunately, it isn't what you could consider a healthy recipe -- pasta shells stuffed with a mixture of chicken, stove top stuffing, and mayonnaise, all drenched in a sauce made up of mostly butter and heavy cream. In my quest to make a healthier version, I used stove-top stuffing with no added butter, added broccoli to the filling, used reduced fat miracle whip, and opted for whole wheat lasagna noodles rather than regular jumbo shells. This recipe was a lot of work but turned out to be a delicious slimmed down version of my mom's stuffed shells. You could also make this ahead of time and freeze!

    These turkey burgers are fast, easy, and healthy! They are great on the grill and also freeze well. As a college student who is always looking for healthy, fast meals, it doesn't get any better than this. The night before, I take one burger out of the freezer and let it thaw in the fridge overnight/while I have class the next day. Once I get home, I just throw it on my forman grill and dinner's ready in about 5 minutes! I serve on Arnold Sandwich Thins with sauteed onions.

    This will forever be a soup that makes me think of my grandma. Rivels are kind of simple little dumplings dropped into any flavor of broth. When I asked my grandma how to make it, she said, "take some eggs and some flour, a little salt, and rivel 'em up!" We often ate this soup with bbq grilled chicken during the summer. (When I was younger we always had chicken rivels, but recently I made a stock with the ham bone from christmas, added some ham soup base, and diced up some leftover ham to add in.     This is one of my all time favorite soups! It's thick and hearty similar to a chili, but has the same flavor as traditional stuffed peppers! Using extra-lean ground beef, 98% fat free beef broth, and brown rice make this recipe surprisingly healthy. It's very easy to make and also freezes well. Serve up with some crusty bread and you have a one pot dinner.
