    My husband and I decided to make a lifestyle change which included eliminating sugar, white flour, processed foods etc., from our diet. I created this delicious and simple recipe to satisfy an occasional sweet tooth, also this dessert is ideal to serve to children as it is only sweetened with honey. If using organic apples you may choose to leave the peels on, also depending on the sweetness of the apples you use you may choose to decrease the amount of honey. To make a virtually fat free version, you can also eliminate the butter in the topping, I have tried this both ways and find that it turns out almost the same. I hope you enjoy!

    My daughters' mother in law makes this at Christmas and it is the best homemade candy I've ever had. The measurements for the chocolate and almonds are approximate. Also you can use your favorite chocolate here, dark or milk as well as your choice of nuts. I recommend that if you have a BBQ with a side burner to take this outside to cook as it does start to smoke when it reaches the crack stage. Enjoy!

    This is a recipe that my mother used to make for us when we were kids. It became my brothers favorite. It's a great winter dessert, very simple and easy, one dish clean up. When ready you will have a delicious cake with a sweet sauce. This recipe asks for nutmeg, however if that is not your favorite spice flavour I'm sure you could substitute cinnamon and it would turn out just as great. This recipe can also be adjusted using low fat milk, soy, whole wheat flour etc.

    I created this one evening when I was trying to create a dish made with barley that would appeal to everyone in the family. It is very simple and really does taste great. Barley is low on the glycemic index so it's a great dish for someone who is heath conscious. If you enjoy garlic flavour add a clove or two while the mushrooms saute, also red or green diced peppers would probably taste quite nice as well. If you are on a low fat diet you may replace the butter with olive oil and replace the cream with low fat milk or a creamy soy milk.
