When I landed on this recipe while surfing the web, I had to try it. I'm so glad it did. They are delicious. Tip I: The dough should be soft but not sticky. It took me two attempts to get that just right. Tip II: I posted the recipe as written. After, several batches, I don't press the dough into a rectangle anymore. I divide it into eight equal pieces and pat each piece into a 1/2" thick round. Then, turn each round in dish of cornmeal.
This recipe was taught to me by my friend Mary, who was raised in Mexico, when she learned that I didn't like Menudo. She adds a whole jalepeno to the recipe, but that's to hot for me. The prep and cook time doesn't include cook time for the pork.
I love these muffins. I make them fairly often because I always have the ingredients on hand. I especially like them with apricot jam or orange marmalade, but peach jam and strawberry preserves work well too.
I tried this technique for cooking potatoes when I'd intended to make twice baked potatoes. I put the potatoes in the oven, got sidetracked, and forgot to turn the oven on. Ooops. Turned into a delicious accident. My husband loves these and calls them fried baked potatoes.
