I just stumbled upon this creation in the kitchen just a bit ago, and I am feeling nice and satisfied right about now. Mmmm! It was yummy.
I call it "Faux" because instead of traditional lima beans and corn, I used edamame beans and corn with a can of diced tomatoes and lots of spices. This is a healthy, lowfat, nutritious vegetarian meal that is sure to please, even the meat lovers.
