This was once called "Depression Cake", due to the economic times, and it may see a revival yet again. Cooks Illustrated has renamed it "Wacky Cake".
Do not mix this in a bowl first, mix it right in the cake pan.

The seasonings can be changer(i.e.parsley or thyme) and so can the veggies. If you would like to use beef stock or wine in place of the beer that will work also.
this was a hit at the bbq. Everyone I know does the typical pasta salad with black olives & tomatoes, but the artichokes, REAL bacon bits, Vermont cheese and green olives were a hit! I like trying new things.
Sometimes boxed curry mixes can make a simple curry for a day when you don't have time to make your own curry. I used 3.5 oz. box of Golden Curry mix.
The heat can be higher or lower and other vegetables can be added or taken away.
We like using cheaper parts but the breasts will do for a party Sometimes we use rosemary in place of the thyme
You use cheap dry white wine for this....red will turn the chicken an unplesant mahogany color but it willl tast fine.
A well traveled family friend gave us this recipe and we have always loved making this comfort food.
A small fresh salad and fresh fruit in season usually goes with the pie.
You could also use ground chicken or turkey instead of beef.
If you are unable to find tomato sauce with roasted pepper just use 24 oz tomato sauce and 1/2 cup chopped marinated sweet red pepper.

John Wayne is famous around the Maricopa, Arizona, area as he was one of the owners of Red River Farms, a large feed lot near there.
Here is another favorite from friend Karen. Her Hubby does lots of salmon fishing so she found this recipe and gave it to us. I think you could use chicken in place of the salmon. She said the original recipe was from a Better Homes & Garden magazine
