Since my diet has become even more restricted these days I've had to get much more creative with fewer and fewer ingredients. Unfortunately, one of the first things that had to go was Asian cuisine, which I miss every day. Plum sauce and ginger is a good combo that helps create the illusion that you may actually be eating some good take-out instead of a low-sodium, low-sugar, gluten-free delight with no complex starches. As always the spice measurements are more of a suggestion; everyone should spice to their own tastes!

    Recipe #330308

On my hunt to make a lower-fat moist gluten-free cake that cooked all the way through, I experimented with the base recipe for this "Recipe #47421" and converted it to my tastes. It was so moist and tasty that I had to post it! You can probably half it to make muffins, but I haven't officially tried that yet. You can add ginger and allspice to make it a spice cake too. Definitely serve to gluten-eaters guilt free; it's delicious! PS. for my rice flour mix I use "Recipe #214986"

    Recipe #311455

I got inspired by an entry from Karina's gluten-free goddess blog where she made a vegan veggie polenta pie. I decided to make my own Italian variation and it was delicious! I ate it for dinner all week but could be the perfect hearty addition to any pot-luck meal as main course or side dish if you omit the meat. I usually cook by eyeballing measurements to my tastes so you can increase or decrease sauce or cheese to your tastes. All veggies used could be substituted with your favorites!
