    This is just another version of a good old stand by. The coconut milk makes it just a little more creamy. I used regular coconut milk but I am sure lite would be just fine also.

    Easy and Quick but so delicious. Spike seasoning has become my new kitchen best friend I use it on everything. I originally made these shrimp to eat with a pasta dish but they would also be so good on their own with a side of white rice and salad. I love these 3 ingredient meals.     Delicious and full of vegetables goulash is one of those things its hard to go wrong with. This is always a winner with adults and children alike. I find even the kids will ask for seconds. Its a warm and hearty meal which I can usually make with items on hand. I recently have started adding whole wheat noodles to the mix in order to make it healthier. I also used buffalo meat this last time as its lower in fat than regular ground beef. Could not even tell the switch had been made. Hope you enjoy.

    Periodically I make a real effort to use up everything in my pantry and freezer so that nothing goes bad or out of date. Sometimes it gets a little interesting as I try to use up the last of stuff. This is one of those recipes. Pretty tasty though. I used turkey as that is what I had left over from Christmas. You can pretty much throw what ever vegetables you have on hand into the mix. This recipe really allows for substitutions.

    This is my recipe for meat loaf. However, I have always cooked it in a 9x11 pyrex baking dish so my husband calls it meat cake. It even has an "icing " on top. I usually make mashed potatoes and a green vegetable to go with this. I also have enough leftovers to make meat cake sandwiches later in the week. The meat cake sandwiches are delicious.

    I have always loved the chicken enchiladas from El Chico. I decided to come up with my own recipe based on how I remember them. I was so excited because there were no leftovers. I used about 4 chicken legs and 3 small breasts for these enchiladas and I had about 1 and 1/2 cups leftover. I took a few bites to the office the next day and these are now requested for our Christmas potluck.

    I love Miso Glazed fish and this is what I had on hand. Also loved that I cooked it on the George Foreman Grill but I think any electric grill would work. Easy Breezy Dinner in a flash.     This is what my grandmother used to make when we were sick. It is a delicious chicken soup that I could eat anytime. Mamaw said the Chicken Tippy Toed in and Tippy Toed Out.     My kids love this song and they love these red beans and rice so it seemed appropriate. This is such an easy recipe I use for the crockpot on Monday's. The leftovers are always better the next day. I always add about a 1/2 to 1 teaspoon of vinegar to each bowl of beans when serving it just tastes good. I never salt my beans till right before serving as you do not know how much really needed to after sausage is added and liquids cook down.

    I was reviewing a lot Moroccan Chicken Stew recipes and I was missing a few key ingredients so I came up with this one instead. I used 2 small snack sized boxes of raisins as that is what I had on hand. Not really Moroccan and not Indian. I kind of fused the two together. All vegetables were cut in large sized dice.
