    This is a quick and tasty dinner that's sure to please a hungry family in a hurry. This is a variation of the usual "hashbrown casserole" that I tend to see everywhere. I guess you can say this is more of a skillet. It avoids the casserole dish and the cooking time but with all the flavour and less fat as I don't use soup, gravy or cream. My kids never say no to this. I use either pre-marinaded steak from the grocery store or marinade my own steak and have them frozen in the marinade.

    In my search for gluten-free anything, I came across this root vegetable called Cassava (or Mogo in Africa). It's actually the root of the Yucca plant but it is an amazing, flavourful food. It tastes like deep-fried potatoes and slightly like bread with a very slight hint of sweetness. Once I found this vegetable, I decided I'd experiment with it to see what I can come up with. This is the first one with MUCH success, as my kids ate it with no complaints and asked for more even though they were full. This is excellent for breakfast, a side dish, a snack, a lunch, whatever you want!

    I searched for a recipe that combined all these lovely ingredients and couldn't find it. I made this up myself based on a friend's concoction one night and a bit of experimentation. I served it at a party I held and there was nothing left by the end of the night. The guacomole lovers LOVED it!

    A flavourful all-in-one pasta dish with a bit of a kick. This is one of my 20 minute wonder meals that pleases anyone that I have served it to. It takes a bit to get the timing perfected, depending on the noodles you use but once you have it down-pat, it's great. If you're not into the spices, just omit them and it's still excellent. My kids always ask for seconds.

    I found this recipe and modified it to my tastes. I can understand how it could be called an omelette but I think it is more of a roti. After much discussion with friends who ate, liked and commented, the verdict is misi roti but I thought I'd include the orginal title so vegans could find it and enjoy it as well. It is also gluten-free which is a big plus.

    This is a big hit at my house and the first time I made it, my son asked me why I hid this from them and why didn't I ever make it before. It's extremely filling though so watch out! One tip is to make sure you start with thawed perogies. Usually when I start making it, I throw the bag into cold water before hand. Also you can substitute real bacon or ham instead of turkey bacon. I don't use the pepper but that's due to my kids' preference so it might be really good!
