I love this soup. I like to have the vegetables cut medium it makes is hardier. But if you prefer smooth you can always chop smaller or puree. I also omit the bay leaf because I don't like bay leaf. I also use a ham hock from left over Easter or Christmas dinner.
The pampered chef, I was wary of trying this even though the picture looked amazing. I am not a big fan of super spicy. So I make chicken breasts instead of tenders. It was sooo good I had seconds and wanted thirds!
Giada recipie for her daughters 1st birthday. I tried it and couldn't stop eating it. I was surprised how much I loved it. I didn't have marscapone so I just used a full cream cheese bar. Definitly will make it again.
