    This isn't so much an exact recipe as it is a method. I make this using up leftover bits of vegetables and cheeses from the fridge. It's a little bland as written, but that's because I have a 3 year-old to feed. I usually add extra spices to my serving (garlic, ground black pepper, etc). This makes a quick lunch or side dish.

    This is the quick and easy way that I make General Tso's chicken when we want Chinese food. It's lower in fat than the deep-fried chicken version that Chinese restaurants serve. I'm sure others do it this same way, and I hesitated about posting such a simple "recipe", but I'm posting it here so that I can see the nutritional information.

    This recipe takes a simple loaf of frozen bread dough and turns it into something delicious! People always think I've made bread from scratch when I serve this. The original recipe came from Rhodes Bread, and I've tweeked it just slightly. It goes well with baked spaghetti or other pasta dishes.

    This layered dip is spread out on a pizza pan or round platter and looks like you spent a lot of time on it, but really it's very quick and easy! Ruth was my beloved neighbor & adopted grandma--a great cook who is very much missed. My family makes this dip for special occasions.

    I got a deal on pork cubes at the grocery store, but wasn't sure exactly what to do with them. One night when I wanted an easy, comfort-food kind of meal, this is what I came up with. NOTE: The Zaar computer won't recognize the "Lawry's Perfect Blend Seasoning and Rub for Chicken or Poultry" that I used, and keeps changing it to "seasoned salt". That would be way too much salt! Another brand of rub would probably also work.

    An easy gift idea that I have used many times- I also like to make a batch of this to keep at home for myself! This recipe is a little different from others posted because it doesn't call for one specific flavor- no cinnamon or cocoa powder here. You can use any flavor of powdered non-dairy creamer, or, use plain creamer if you like your coffee less sweet. As written, this recipe fills six 8oz jelly jars (to use as gifts), or, fills one big canister to keep for yourself.

    Quick and easy, this punch is always a hit at parties and showers. We vary the color and flavor of sherbet with the occasion- green for Christmas, pink for showers, etc. Rainbow sherbet also makes a pretty punch. I always use Sprite for the soda. This recipe comes from my mom. :)

    I was searching for something sugar-free to take to a bake sale, and came across a recipe similar to this online. This is my modified version of that recipe. These sold quickly at the bake sale! They have a granola-like appearance and are soft and chewy. A little cinnamon added in might be good, too.

    Here's my favorite way to use up left-over mashed potatoes. If your mashed potatoes are flavored with garlic, onions, etc. it's all the better. Measurements are approximate since I usually throw this together to use up leftovers in the fridge. If my potatoes are plain, I have been known to add a little chicken bouillon to give them more flavor. Serving size may vary- my two year-old DD and I share one of these for lunch. This definitely is not a "diet" meal, but, it's delicious!

    Here's the simple crock pot combination I've come up with based on friends' advice and some other recipes I've read. I like to serve it with corn bread and sliced fresh tomatoes. NOTE: In the time since I originally posted this recipe, I've tweaked it a bit more when I make it at home. I found that the addition of some chicken broth really enhances the flavor!     A wonderful treat, especially on a hot day. I keep a tray of coffee ice cubes in my freezer during the summer so that I can always whip up a batch of these drinks. This uses skim milk & fat-free chocolate syrup, so it's not only cheaper, but also lower calorie than the iced coffee sold at most coffee shops. I have used both brewed and instant coffee and it works well with either kind. (Prep time given is for freezing the coffee ice cubes, cook time is for actually making the drink.)

    This is a wonderful twist on the generic cream cheese/ tortilla pinwheels that are served at lots of parties. You can slice these into pinwheels for an appetizer, or eat a whole tortilla as a sandwich. Green onions are another nice addition. I often leave out the ham and add more cheddar cheese-- either way, these are delicious!
