This is a different potato salad I make when I have an abundance of fresh Basil from my garden in the summer. Its a refreshingly different kind of potato salad that is relatively low in fat compared to the others!
I love any kind of seafood but DH just doesn't seem to like it. He will however, eat scallops for some reason. He loves it when I make these and serve it with a good steak and a baked potato. This is his special meal I make! They are really easy but be careful not to overcook them.
I crave TGIF's Spinach dip and I found this copy kat recipe. Its really good and is close as it gets to Fridays! I like to make it for my Christmas buffet too because it looks so pretty! Watch out though its addictive and not exactly low in fat! :)
I found this in a community cookbook. I haven't made these yet but they sound delicious! With Fall in the air and Pears in season I thought I would share. I think they would be nice served with a scoop of vanilla ice cream.
I found this in The Harbor House retirement community cookbook. My sister works there and got it for me as a present. I'm going to make this on Thanksgiving as a sidedish. It sounds good so I decided to post it for others to try too!
This is a satisfying meatless meal that is very easy to make. You could make it with meat sauce if you like. Serve it with a salad, some good garlic bread and a glass of red wine. I got this from a local retirement community cookbook.
These Enchiladas are over the top! I was hungry for Mexican food and couldn't decide if I wanted beef, rice, or beans so I concoted this recipe and we loved it. My DH absolutely devours them! They are VERY rich and filling though.
*Note these are not a very wet Enchilada. If you prefer more sauce you could add some Enchilada sauce.
