    These sweet olive oil wafers are probably my favorite treat. They originate in the Andalusian region of Spain where the government has strict specifications for the commercial production of Tortas de Aceita. I adapted this recipe from Miriam, author of the blog, "The Winter Guest From My Kitchen In Spain". This recipe is easy to make. The wafers have a nice crust and a flaky interior. And they just plain taste good. You can either weigh the ingredients or measure by volume. I will give measurements for both. The weights given are more accurate than the volumes. Get creative and adjust the sugar and the herbs/seasonings used to create your own favorite variety, either sweet or savory! Just always be sure to use a good quality extra virgin olive oil, you're going to taste it, and they are so worth it!

    A delicious babka. I love the feel of this dough and work it by hand. But feel free to make this in your stand mixer with a dough hook, or prepare the dough in your bread maker. Be careful when twisting, if you twist too much, the dough will tear. Preparation time includes rising time - make your filling and streusel topping while your dough is rising.

    These are not the Tex-Mex version of Migas, these are authentic Spanish Migas. Both styles are delicious, they are simply different. The best bread for migas is a peasant bread with a very dense crumb. Open crumb breads like baguettes or ciabattas are not good for migas. Stale bread works best. Migas is a poor man's dish. I have included mesurements, but I don't use them, and you shouldn't be bound by them. Just cook it, love it, and eat it:) Note: Overnight time is included in prep time.

    This recipe came from my Grandmother, Ida. My Mom used to make it when I was a kid (although I wouldn't try it back then). It is a great soup and can be made with any fruit. We eat it warm. I haven't tried it cold. The dumplings absorb the goodness of the fruit juice and it really is a nice treat. The cook times are approximate as there is no set rule for how long the soup can cook.
