My mother, who is a wonderful cook, gave me this recipe that she found in a green chili cookbook she purchased in New Mexico. It is so good. The recipe has a list of contributors as well as a list of variations. We like the variation that uses hominy, so I put that one on the ingredient list. Enjoy on a chilly day :)
There are several like this one, but my MIL has made this for years, and it is a real hit for our family. It is also about as rich as we would ever want. It came from the First United Methodist Church of Euless, Texas, cookbook.
These are great breakfast handfuls. My DH loved them. I wrapped them individually & refrigerated them & he kept snaking on them all day. Easy & good, the best kind. The original is on the Bisquick website.
The two amounts of shortening are added together and 36 - 48 muffins are an estimate. This has been in my family for years. It keeps in the frig. for over a month & all my kids (even the junk food junkie) loves it. You can add raisins or other goodies if desired. This is easy to mix by hand and will keep a month or more in the frig.
