This is a soup that I make to get rid of left-over chicken. You can play with the amount of peppers in the soup to make it more or less spicy for your preference. I got this recipe from the Better Homes and Gardens Easy Everyday Low Carb Cookbook. I made this dip for a BBQ a couple of days ago - I served it with broccoli, carrots, celery and bell peppers. It is light and good. Prep time does not include chilling the dip.
This is the enchilada recipe I grew up with... easy to make & good. Hope you enjoy! When I make this sauce, I constantly check to see if it "tastes right" for the mood I am in. If I want it spicier, I add cayenne pepper or more chili powder, cumin, etc. I am happy with the consistency of the sauce, but add more chicken broth to lessen the thickness, or cornstarch or flour to make it thicker.
