    Easy way to get that delicious stroganoff flavor without the time or meat! I love to use dried mushrooms because rehydrating them creates such a rich broth, and they also have a more pleasant texture for eating. You can get dry shitake mushrooms in the Asian foods section, and they usually cheaper there. However, for a more elegant dish, dried morrels, chanterells or porcini mushrooms are very nice. Drink with dark beer or pinot noir.

    An idea I had. There are a couple of savory stuffed apples on here but none with sausage. Pork, apples and sage are such good flavors together, why not rearrange them? Not sure on times yet so be cautious. Updates when I make it! Serves 4, or you can use smaller apples to make appetizers.

    For a light pasta sauce with a pungent herb taste. I made this because cilantro is much cheaper than basil at the grocery store. I served this with a mixture of pasta and cooked spaghetti squash. I didn't measure (I'm bad at that) so keep that in mind and just add amounts that suit your needs.

    I made this tonight for dinner, and I feel refreshed. All the comfort without all the guilt. The broth really makes it, I bet even non-veggie eaters will love it! Garnish with a little Romano or Asiago cheese... yum! And it's so quick, I got home with groceries at 5:30 and I was eating in my sweats by 6!

    I had some halibut I was going to steam but when I opened the package it didn't look like enough food. So I decided to toss it into my couscous and season with ingredients on hand. This is a great one dish meal I can eat for several days! Spicy and full of good veggies. I learned this method from a friend from Tunisia. he makes it with lamb and zucchini, so feel free to get creative with ingredients!

    I made these for breakfast on a whim. I wanted muffins but couldn't seem to locate a suitable addition, until I came across a Nut and Berries trail mix. I thought, "Why not?". The muffins turned out crispy and sweet on the outside, and fluffy yummy on the inside. The batter is thicker than usual muffin batter, which I like because it's easier to spoon them into a tin.

    This dish is fabulous. Pork tenderloin is a wonderful meat, very lean but ful of flavor. I started with a classic combination of pork and apples, then wanted cheese and a starch for flavor. Couscous cooks in just a minute or two so the prep work was a snap. Use an oven safe skillet to sear, roast and make the pan sauce.

    I turned these marinated mushroom and onions into a kind of vegetarian Reuben. The sweet-sour flavor of the onion contrasts surprisingly well with the earthy, meaty mushrooms. I also mixed curry powder into the mayo for the sandwiches and it came out great. This is a must for lighter fare eaters looking for something a little bit different. You can make the marmalade ahead of time and have it for quick mealtimes.

    I know the name is kind of a mouthful, but I thought it was fun. This quick bread is so delicious, created by an excess of ingredients I had on hand. Just proves experimentation is a just means of discovering new foods. This makes a fluffy, cake like bread, use one less egg and a littlemore oil for a denser bread.

    A lighter version of your mom's meatloaf. Ground turkey is a gift from the food gods, cooked properly it is just as satisfying (if not more) as beef. The secret is to find ways to add moisture and flavor it with bold seasoning. The Worcestershire beefs it up well, too. Beef taste without the fat, it doesn't get much better! I also took a time-saving tip from Rachel Ray, which is to form the meatloaf into personal sized portions, which cuts the cook time from an hour to about 25 minutes.

    A glorious cottage pie full of hearty flavor. Same as shepherd's pie but beef instead of lamb makes it a cottage pie. Classic comfort food, nothing hits the spot like this one when you need a soothing home cooked meal.
