The idea to make these gluten free Blueberries and Cream Cupcakes came from the book Martha Stewart's Cupcakes.
While testing, the boys and I were referring to these yummy little gluten free treats as blueberry shortcake cupcakes and as you can imagine, the 3 of us enjoyed every bite.
I've been wanting to make gluten free Carrot Cupcakes for a while now. When I think of spring, I think of carrot cake and when I think of picnics and potlucks I think of carrot cake cupcake yumminess.
This chocolate "dirt" is perfect for dusting cakes and cupcakes. It's made from one simple ingredient --dark chocolate chips and super easy to prepare.
I recently used this dirt to dust the Whipped Cream Frosting on my Banana Cream Pie Cupcakes.
I'm on a gluten free cupcake mission, as you can see from these gluten free Banana Cream Pie Cupcakes and my other recent cupcake recipes for Jelly Donut Cupcakes and Coconut Key Lime Cupcakes.
This one was a real winner with my children. Whenever I get out the icing bag, they go bonkers and yesterday was no different. I had to hold them back when they arrived home from school, so that I could get a couple of these cupcakes frosted the way I wanted for a quick photo shoot. Once I put down the icing bag, my younger son set to work on icing the rest of the batch. He did a great job and had a good time while my older son ate them. Cupcake fun was had by all.
Jenne from sweetpotatosoul.blogspot.com had a delicious looking recipe for Riesling Shortbread, which I decided to attempt to make gluten free.
Here it is.
I am on a coleslaw roll. In fact, my children are so tired of coleslaw that they have begged me to stop making it; I made coleslaw with dinner every night last week and just can't get enough crunchy cabbage.
This dairy free, gluten free pumpkin ginger soup with coconut milk hits the spot.
I decided I had to make something pumpkin today after making pumpkin pies from my gluten free cookbook (The Gluten-Free Almond Flour Cookbook) and finding myself with a bunch of leftover roasted pumpkin. Of course soup was the easiest thing to make after making one too many pumpkin pies for family and friends.
For those of you that have leftover zucchini from your gardens, here is a delicious gluten free zucchini chocolate chip mini muffin recipe. Our garden is just petering out with the severe frost we had last weekend and I need to get going on pulling up all the wilted plants from the yard.
Meanwhile, with this colder weather I've been a baking fiend and my family is fully taking advantage of this, loading themselves up with gluten free goodies.
I often enjoy serving this yummy, healthy green beverage in wine glasses. Remember to drink it slowly, so that you can absorb and digest every ounce of green goodness.
I'm slightly obsessed with Mounds and Almond Joy this week. I've been making tons of coconut, chocolate and almond recipes the last few days.
So far, this one for gluten free Almond Joy Chocolate Bark is my family's favorite. I like the way the toasted coconut adds a tiny crunch to the bigger crunch of the almonds, all of it enrobed in delicious dark chocolate, of course. Go ahead and try some, see for yourself!
I'm loving this gluten free, dairy free Strawberry Lime Shake made of fresh coconut milk. My boys love it too. After I took a picture of the shake yesterday and placed it in the fridge, the boys grabbed it greedily and drank it all down. They have a certain penchant for consuming my photo shoots like that.
I hadn't thought of making coconut milk from shredded coconut until I read Sarma Melngailis' book Living Raw Food. I cannot recommend this book highly enough. This recipe is a little messy to make, however, I like it since it's a heck of a lot easier than cracking open a fresh coconut and scooping out the "meat," etc.
We are loving these Lemon Kale Chips. I can't make enough of them --the boys scarf them down hot out of the oven. Yesterday, they ate 3 batches, yes you heard that right, 3 batches of kale chips, after school. Of course, like everything else I make, these are gluten free.
I can tell this Green Chicken Soup is going to become one of my go to dishes in no time at all. I love this soup because it is an easy way to take in powerfully nutritious greens.
