    For those far from the Philippines and nostalgic for Ensaymada Especial, this is a quick, easy, & very tasty way to experience it. I got the idea for using Hawaiian sweet rolls when I visited a food blog several years ago. I have since improved on the recipe by using spreadable butter (Smart Balance brand) and adding shredded mild cheddar cheese and prepackaged sweet diced ham (John Morrell brand) to give it that extra-special touch.

    The inspiration for this recipe comes from an avocado dessert I grew up eating. (In the Philippines, ripe avocados are chopped or mashed and eaten in a bowl of milk with sugar and ice.) I had this last-minute idea of combining mascarpone cheese and avocado to make this dreamy dessert. I think the combination turned out delicious. My husband thought so too!

    This tastes exactly like the one you can get in a bottle at your local oriental stores. Make it yourself. It's a lot cheaper! This recipe is for 7 cups of Thai tea. You and your guests can sweeten it to your liking. Diabetics can add their own sweeteners. Thai tea mix comes in a 16 oz. bag and it is available in your local oriental stores or online (Amazon) I prefer Nestle creamer, but you can use half and half, evaporated milk, or condensed milk (just omit the sugar.)
