From Melissa Winner, Gulfport, MS, as entered in Cuisinart Stand Mixer competition, and later entered on Food Network's Ultimate Recipe Showdown as Ruby Red Grapefruit Cake. I prefer a glaze such as this on my Bundt cakes, so no refrigeration is needed, although Paula Deen likes a cream cheese frosting on hers (see Recipe #324804). This can also be made as two 9-inch layers, which would work better with the cream cheese frosting. Ms. Winner recommends serving with dreamsicle ice cream and a sprig of mint.

Calories, fat and cholesterol were reduced by eliminating the oil for cooking the spinach, using fat-free cottage cheese in place of full-fat cottage cheese, and eliminating the butter. Note (my addition), vegans can create a substitute for cream cheese by straining soy yogurt to make a soy cream cheese (pour freshly made soy yogurt into two layers of cheesecloth fitted into a strainer. Next, tie up the ends to form a bag and hang the bag over your sink or over a pot for a few hours. When it has stopped dripping and is spreadable) or by mashing a block of tofu with a fork and mixing in a few teaspoons of lemon juice. When time is tight, potatoes may be cooked in the microwave according to manufacturer's directions.

    Entered for safe-keeping. From Deborah Madison's "This Can't Be Tofu!". She claims the taste is similar to a Mexican liquados (bananas, vanilla and Mexican cream). Orange flower water is used in Middle Eastern and Indian cooking; if you can't find it, you might try Recipe #110957 #110957. She suggests the following variations (which would no longer qualify as "all-banana" ) : 1/4 cup peanut butter or almond butter (an "Elvis"! evoking Elvis Presley's love of bananas with peanut butter); 2 tablespoons or more of chocolate syrup; both peanut butter and chocolate syrup; or 1/2 cup coconut milk plus a squeeze of lime juice. Cooking time is blender time.

Sam Miles emailed me 1.26.09 to say the sauce should resemble thin pancake batter, and used sparingly; she agreed it was best to start with 1/2 cup of skim milk (I suggested evaporated skim milk for better consistency).
