    This recipe comes from Quick and easy diabetic recipes for one. When I made this I didn't think it looked very appetizing but it tasted much better than it looks. I use wholemeal pasta for a bit extra fibre and be careful not to over cook the pasta as it's better for you if it's al denti. You can double the recipe for two but as I cook for one when DH is away with work this suits me just fine, hope you like it.

    My friend and I went for a bar lunch one day and this was a side dish. I did try to get the recipe from the chef, but he just would not be coaxed into giving me it. So here is my effort and I think it tastes just like it. You can add more cinnamon if you wish. You can serve this with lots of different dishes it goes well with most things.

    This is an amazing recipe, such a very tasty dish if you season well with lots of pepper and salt to your taste, but be generous with the pepper it will make all the difference. You might want it hot, or then you might want to have it cold with a green salad, ether way it's great.

    This is a nice filling healthy soup, you can use any dried beans you like but butter beans are our favourite. If you don't want to use stock cubes you can just use water I have made it with water and it's ok not quite as flavoursome but still tasty.

    I love this soup, it's so creamy and spicy good for a cold day with a nice slice of homemade bread, totally comfort food. I make my own curry paste with oil and mixed spices, or you can just use some curry powder made into a paste with a little water I have used both in the past.

    These are a great stand by. They can be made in a blink of an eye and your lunch guests will be impressed .I would have them with a nice green salad, and a bit of salsa on the side for a quick easy meal in the middle of the day.     This is a great recipe to use up leftover chicken. It's very cheap to make.I found this in a magazine but I have added my bits and pieces to it. You can change the contents of the pie to what ever you have in your fridge, I sometimes use cauliflower or broccoli and alter the cooking time by a bit. you can also use other things in the mash like carrot or cheese, you would just have to boil the carrot with the potatoes from the start.

    I have a very old BE-RO book and the recipe has been changed in the new book. I use my old book that I have had for so long that the pages are all falling out but it's a better book, better recipes. My gransons love chocolate and so we thought we would try and add a bit of chocolate to the original recipe. I doubled the recipe.

    This is a nice warming meal on it's own. I wanted to use leeks that were in season and a good price. and of course leeks have a nice delicate taste. I used mostly the white part of the leek and saved the dark green for soup so nothing went to waste. If you choose you can make the sauce with half milk and half stock.

    These are great, very filling and stops you felling hungry for a long time. the recipe calls for honey but I used Da Vinci vanilla s/f syrup and a tablespoon of erythritol and that was sweet enough for me, but you can adjust the sweetness to you liking. I have added the original honey to the printed recipe. Again watch for your coconut flour being lumpy.

    These are nice little biscuits with a butter cream filling in the middle, the recipe is from my BERO book I have had for many years. I love coffee biscuits and cakes but never drink the stuff, don't know why I just don't like it in a drink. I would much rather have these wee biscuits with a cup of tea. you should get about 60 so you will end up with 30 sandwiched together
