    A different twist on the hotdog soup. This is a fast, fun and very kid friendly meal. I have my daughter help me make this and she feels proud that she 'cooked' a meal with me. And then she gets to sprinkle the parmesan cheese in the bowls. The cream cheese makes the soup creamy and smooth and gives it a 'comfort food' feeling (I use a non-dairy 'cream cheese'). And for us, this is salty enough, so I don't add salt. I like to serve this with warm biscuits. Perfect for on a cold winter evening. Enjoy! :-)

    If you do not like to use soy flour, I'm sure you could substitute almond flour in this recipe. I found this on Bob's Red Mill's website. I've modified this recipe to make it low carb and vegetarian. These are not super fluffy and slightly dense. I found these to be very filling and taste great with my Blueberry Pancake Syrup, which is low carb also. ETA: I made this with almond flour and it tasted very good. I needed to add a few spoonfuls of additional coconut flour to thicken the batter.

    This recipe uses powdered stevia as the sweetener. It has whole blueberries and looks nice on top of pancakes. This is modified from one I found on the web. I made this mildly sweet, but if you prefer a much sweeter syrup, then you may want to add a bit more stevia powder or maybe add a low carb flavored syrup.

    I'm always on the look out for unique and healthy recipes. I found this on a Candida recipe forum and I altered it a bit to suit my tastes. I don't have Candida, but I thought this looked like a healthy pancake and decided to try it. Turned out great! It is more dense than a normal pancake and has a nice nutty flavor to it. Plus you get all the great benefits of eating pumpkin seeds. :-)

    Got this recipe from a message board for low carb'ers and wanted it here for my reference. Sadly, I don't know who the originator of this recipe is. This is quick easy, healthy, very low carb and high fiber. Works great as a sweet muffin as well as savory muffin (just omit the sweetener - goes well with soups). Original called for one packet of splenda as a sweetener. I only use stevia. Add in options; fruits, nuts, flavored sweeteners/syrups, cheese, bits of ham, vegetables or spices ... get creative and enjoy!

    This is my take on vegetable pancakes, inspired by other recipes I've seen out there. I'm not a huge fan of potatoes, so I used cauliflower instead. I'm sure zucchini would make a good replacement or maybe even cabbage. And I used a mix of red and green peppers which turned out great. Experiment and have fun with it. This turned out to be an easy way to get my picky 3 year old daughter to eat some veggies. And I found that it had a nice comfort food taste, yet was very healthy. A welcome bonus! Also, I am avoiding wheat, so I used spelt flour here and it worked out very well. Feel free to offer any variations or suggestions ... I'm new to putting recipes together. :-) March 27, 2008
