I combined a few different recipes to come up with my version of popper dip. This is warm and smoky and a new favorite for me to take to parties. I always use light ingredients but feel free to go full fat.
This recipe is actually a combination of a few different recipes in my cookbook collection. It seems to be everyon'e favorite and I get a lot of requests for it but it is so easy. I have also made this with white chocolate pudding and a chocolate crust. Enjoy!
We sometimes have this for lunch or dinner in the summer when it's too hot to cook. It's got a little bit of everything...veggies,carbs and it's high in protein too. I usually serve with a crusty bread.
Nice change from the usual Italian pasta salad or macaroni salad with mayo. Pairs well with salmon or honey mustard/teriyaki chicken or pork. Nice summer side dish and a huge hit at potlucks. It makes a lot, too.
