A really moist delicious pumpkin cake recipe I found online and adapted to be vegan. I attempted to use this in order to make the 2-bundt pumpkin-shaped cake I saw on Pinterest but my pumpkin capsized on transport - could have been because I didn't wait for the cake to totally cool first or because this cake is so dense and heavy. Either way, it tasted amazing! (Made vegan and with Pumpkin Cream Cheese Frosting)
An AMAZING kale recipe from Real Simple. Also easy to make vegan by substituting vegan cream cheese, sour cream, and butter! I didn't have bread on hand so I used crumbled crackers on top and omitted the butter.
Mulligatawny is a lemon & black pepper flavored lentil Indian soup. This recipe is an adaptation of several different adaptations of Madhur Jaffrey's recipe. I like it very lemony so I usually add more lemon juice to my individual bowl afterwards!
This recipe is a variation of PETA's recipe - the second time we made this, we changed things up and it turned out great! You can make it into sandwiches, as per the recipe, or you can just eat the tempeh and coleslaw in a bowl which is how we liked it!
I bought this potato salad in the deli section at New Pioneer Co-op and loved it! This is my attempt at recreating it using the listed ingredients. It's good hot or cold but it is very vinegary - if you don't like vinegar as much as I do, then definitely cut back! I think it's best to make it while potatoes are hot, and then refrigerate everything together to let the flavors blend.
