My husband's grandfather was famous for this easy and delicious top round beef roast. Prep is quick, easy, and calls for less than 5 ingredients (not counting the beef, of course). The pan drippings make an out of this world gravy when whisked with a bit of flour. This is best served with mashed potatoes and oven roasted asparagus or broccoli (place veggies on jelly roll pan, drizzle with olive oil and salt and pepper, roast at 400F for about 20 minutes while the beef rests and you prepare the gravy). Please post pictures and ENJOY!

I have searched high and low for the quickest and easiest crockpot hamburger stroganoff and this is it. I use fresh mushrooms because I absolutely hate canned mushrooms, but you can use canned if you prefer.

I LOVE banana chocolate milkshakes, but they are not so healthy. I had an urge for one today and decided to use one of the too-ripe bananas that I always freeze to bake with later. This recipe is a great quick breakfast that is full of vitamins and give you one serving each of dairy and fruit. ENJOY!

Hubby and I were craving a sweet treat one night, and I happened to have oatmeal and a 4 oz. semi-sweet chocolate bar on hand. These delicious cookies were the result.

This recipe comes from another Kindergarten teacher in my school. These are out of this world delicious and great with steaks or a prime rib dinner. If you need to, you can substitute cream cheese for the mascarpone.

My husband loves chicken Parmesan and this is what I came up with to please our taste buds. It is a very simple dish and you get restaurant quality in less than an hour! The trick is to use very thin chicken breast cutlets. P.S. Don't tell my Italian parents I use jar sauce! ;-)

This local favorite is almost impossible to find anywhere outside a 20-mile vicinity of Utica, NY. It is a creamy, spicy chicken and pasta dish that is sure to please anyone's taste buds. Enjoy!

I found this recipe in the February 13, 2009 issue of Parade magazine. Each serving has 400 calories, 5g carbs, 23g protein, 32g fat, 50mg cholesterol. It's perfect with a baked potato.

I've been looking everywhere for a chewy, chocolaty, high-fiber granola bar, WITHOUT high fructose corn syrup, but to no avail. So I decided to make my own! This EASY 5 minute recipe uses Kashi Cocoa Beach granola cereal that contains coconut and almonds. Enjoy!

The "secret" to this tasty chicken and stuffing casserole is in the white wine! My mother-in-law gave me this recipe and it's a perfect make-ahead company dinner. My husband loves it with mashed potatoes and peas. Enjoy! Edited to add: I agree with reviewers who mentioned this dish was too salty so I took out the salt but kept the ground black pepper. :o)

A friend found this recipe for a very yummy and hearty soup in an issue of Vegetarian Times. It's originally called "African Chickpea and Spinach Soup" but I modified it to reflect my own Thai-loving taste buds. The original recipe can be found here:

My friend emailed this recipe to me as a quick, easy, no eggs/no milk dessert. It doesn't have to be for breakfast at all. The original recipe called for Cherry filling, but I prefer to use Blackberry filling. I changed the name to "Berry" because you could use any you wish. Enjoy!
