    This pie is the perfect end to a summer meal! I adapted it slightly from a recipe in Coastal New England Summertime Cooking by Sherri Eldridge. I prefer it the second day, after the flavors have had time to meld together. Yum! Cook time includes time for blueberry mixture to sit. You can also dot the top with a small amount of margarine or butter before adding the second crust for a slightly richer texture and flavor.

    This came into my inbox today from About.com, and I just had to share it. It looks like an easy and healthy weeknight dinner. They recommend mopping up the juices with some whole grain bread.     This has been one of my favorite cookie recipes since I was a kid. I can't believe I forgot to post it on Zaar until now. I saw quite a few similar recipes when I searched, but none that were made as bar cookies. The original recipe was for drop cookies, but my mom adapted it long ago. These just melt in your mouth. Obviously, the serving size depends upon the size of your bars. I just happened to cut them into 32 pieces last night. Enjoy!

    This is a great substitute for traditional, dairy-filled eggnog! I modified it from a recipe on the Soy Dream website. The original recipe called for 1/4 cup Amaretto, Southern Comfort, brandy, or alcohol of your choice. That would be great for special occassions, but I wanted a non-alcoholic version to drink on a regular basis, and this worked out great. It's frothy and delicious. If you like your eggnog even creamier, feel free to add a couple more ounces of tofu.
