These tender muffins freeze well. **PLEASE NOTE** If you substitute store-bought wheat flour for the all-purpose, you do not need to add the additional amount of flour - just use the same amount as all-purpose.

    Adapted from Quick Cooking Magazine. This is a good recipe when you need a very quick-to-fix meal on the table. I have made it with the chicken broth option, as I didn't have white wine the night I made it (I don't drink, so unless I buy wine for a recipe - it's not something I have readily available in the pantry). I used shrimp and with the chicken broth, I thought it was a bit bland and added 1/2 tsp. garlic powder (rounded), 1/4 tsp. onion powder (rounded), and 1/2 cup parmesan cheese to make it more to our liking. I also used evaporated fat free milk instead of the heavy cream to make it lighter and more healthy. If you use the wine, you may not need these extra additions. The magazine also suggests using broccoli or asparagus in place of the artichike hearts, if desired.

    Adapted from Taste of Home. This creamy, flavorful chowder is wonderful. Just a tip: I mega-cook (OAMC) when I can and will roast 4 chickens at once and then cut-up the meat to freeze, so I always have chicken meat on hand for recipes such as this one, which reduces the cooking time considerably. I also substitute canned evaporated skimmed or low-fat milk for the whipping cream, which cuts the fat and calories significantly.

    Adapted from a recipe in my Best of Country Cooking Cookbook collection. This quick pizza-like dish is great for an appetizer, or for a luncheon or light dinner. If garlic butter crescent rolls are available, I use 1 clove garlic; if not available, I use plain crescent rolls and 2 cloves garlic. I make this frequently for Sunday afternoon get-togethers. Since we go to church on Sunday mornings, I prepare everything the night before: I bake the crust, sauté ingredients and assemble everything, cover and refrigerate. When I get home from church all I have to do is take it out of the fridge and put it in the oven just until warmed through and cheese is melted. Couldn't be easier!
