This was in the pamphlet I found at the store that uses JELL-O, Nilla wafers, BAKER's squares, and cool whip. Sounds like the "mock eclair" my husband's aunt makes but instead of graham crackers this uses vanilla wafers. Can't wait to try this, so easy. 20 minutes plus refrigeration time.

This is a JELL-O recipe. I was leaving the grocery store one day and found this free recipe in a JELL-O display at the exit door. I grabbed the recipe but figured I would come back next time I shop and buy the JELL-O. Well, it only took me 2 years to finally be able to buy it, the flavor is only seasonal and that next year I still could not find that flavor of JELL-O anywhere. Luckily I found the JELL-O pudding mix this last holiday season. Tried the recipe and LOVED IT-YUM!! I then went and bought every pumpkin spice flavor of JELL-O I could. I have a cabinet full of them but I know I will have it for the next time I make this recipe. My family loves pumpkin pie anytime not just for holidays. This is a new recipe that I will make every Thanksgiving and Christmas though for sure.

My neighbor bought a cookbook for her son and I was flipping through it and saw this recipe. I told her it looked pretty good. The next thing I know she was calling me up and saying, "I have almost all the ingredients to make this but do you have this and this and this.....?" Well, I did and so we made it together and split it. She had to make a copy of the recipe for me so I could make it anytime I wanted. It is so good. Great for those cold, yucky days or nights. It looks like a lot of work but it is not, trust me.

This goulash was made everytime our church would go to the homeless shelter in Detroit. The ladies from our church would get together the day before and get all the food ready. We would go to Mrs. Shirley's home and she would just whip up this goulash. I usually do not like goulash but hers was just so good that you couldn't help but love it. It is a simple as can be. She would always cook it for hours while we prepared other foods for the shelter. You could smell it coming together and mmmmm smells so good!!
