Another desert gem from the town of Ajo, Arizona's 150th celebration. This is from Senor Pico Restaurants in California.

Mizuna is a yummy Asian mustard green. Adapted this recipe from www.epicurious.com
From Crescent Dragonwagon's "Passionate Vegetarian" book. Very interesting way to have guacamole with much less fat by using low-fat peas to stretch the avocado.
Great for light lunch or to bring to potluck for a low-fat alternative (easily doubles). 2 WW points, from the Secrets of Fat Free Cooking cookbook. Also, olive oil can be omitted to lower fat even more.
I have adapted this from an Eating Well recipe (April/May 2005). They used green olives stuffed with pimientos instead of kalamatas.
This recipe is from Eating Well magazine (March-April 2011). I have made it a couple of times now, and really enjoy it! The dressing is one that I will use separately as well, it is delish!

This comes from Nigella Lawson. I have tried it several times now, it is very good as a take to work lunch. I substitute Splenda for the sugar, and it is only 3 weight watcher points.
