Hot and humid monsoon season in Tucson means time to cook in the crock pot! I found this in BHG's "Crockery Cooking," and I am making it tomorrow! Great low-cal recipe at only 1 weight watcher point per serving.
This came to me in a book called "Romancing the Stove--Celebrated Recipes and Delicious Fun for Every Kitchen Goddess," a very lovely gift from a friend. I have not yet prepared it (placing it here for safe-keeping until I can get my hands on some really fine organic tomatoes), but I cannot wait to!
BF made this last night--it is from the FEB 2004 Healthy Cooking. It is delicious! Very lime-y, so reduce the lime juice if this scares you! 6 WW points per serving. BF added grilled chicken, it was a perfect combo. This would be easy to make veggie--just sub the broth.
