This is a wheat-free, gluten-free (extreme) modification of a recipe from Dr. Peter D'Adamo's Blood-Type Diet Plan. For Type O's. Also easy-to-chew for those with dental problems. For the applesauce, I use Santa Cruz Apple Apricot Sauce.
My mother loves chayotes, but I never have. I had to come up with a recipe that was a good compromise, but accounted for our food allergies. This soup is a big hit with family and friends, and it is really VERY simple. We use Massel "chicken" bouillon for the stock, as it contains no animal products, making this dish vegetarian. Chayotes are also known as merletons.
Always trying new things with my Mom's weird dietary needs, and needed a very vegetably soup one day. If you have trouble finding the shrimp bouillon, trying looking in a Mexican food section of your grocery store for the Knorr's caldo de camarron, or use shrimp or fish stock.
I was influenced by Alton Brown to come up with an easy, juicy, almost fool-proof recipe for roast turkey. The following original recipe has proved so popular, I am asked to make it several times a year, and have to make around a dozen every Thanksgiving. This turkey does not need gravy, as it is very juicy. Prep time does not include brining. Use only kosher salt.
