    It seems like most of the vegan waffle recipes I find are made healthy, but I was looking for something basic. I took the "Grandma's Buttermilk Waffles" recipe from here and veganized it with good results.

    This recipe comes from The Joy of Vegan Baking (a must have) and is one of my absolute favorites. Phyllo dough can be a challenge to work with, so if you're inexperienced with it, be patient and make sure it doesn't dry out. Whatever you do, don't use a light margarine (like Smart Balance Light) with this recipe. You will end up with soggy phyllo instead of crispy (learn from my mistake). Earth Balance works well. You'll need a pastry brush for this. My favorite nut mix is either pistachios alone or mixed with walnuts. One last thing: don't make this if you're on a diet. You won't be able to stop eating it.

    These waffles are for days when you feel like having dessert for breakfast. I like to justify them because the only non-natural sugar added is in the chocolate syrup and chips, fruit is good for you! These are a healthier version than the traditional waffle because they use flax instead of egg and the entire recipe is cholesterol-free. I use vegan versions of everything except the whipped cream. I got the basic waffle recipe from The Joy of Vegan Baking and modified it. I came up with these one day while experimenting in the kitchen. You could even add nuts to the recipe, if that's how you like your banana splits.

    This casserole is delicious comfort food. You could even use this as filling for a burrito. The recipe comes from Judith Finlayson's cookbook "125 Best Vegetarian Slow Cooker Recipes." If your slow cooker is new, you may have to adjust the cooking time. I've found that most of the new models cook faster than the originals.

    I know, this sound weird. I've been a vegetarian for 5 years and there are some items I missed from my meat eating days. I was having a craving for a Carl's Jr. Western Bacon Cheeseburger one day and decided to vegetarianize it. This is super easy to make and tastes very much like the original. To save time and to make it taste more authentic, use onion rings from a fast food restaurant like Sonic. I prepared the burger while I send my boyfriend down the street to Sonic. Also, slightly burning the Lightlife Smart Bacon is what makes it taste like real bacon.

    I combined two recipes for this and made modifications to make it vegan. Note that Morningstar Farms recently changed their product to include egg and dairy, so read the label before buying (not all stores carry the brand new bags, Boca is my second choice). Don't be scared off by the vegetarian/vegan label if that's not your dietary preference, this dish is a traditional comfort food. The best part is it's an all-in-one meal, you don't have to serve side dishes (although a dark green salad with a light dressing would go well too). Note that the photo to the side (from me in the baking dish) is the recipe cut in half.

    This recipe came from Vegan Cupcakes Take Over The World, but I made a small modification with the frosting (using much less, trust me, it doesn't need much). No one will believe you when you tell them they're vegan. The cupcakes taste like moist banana bread. Double frosting recipe to create cupcakes like the ones in the photo. My favorite vegan margarines to use for baking include Earth Balance and Nucoa (in the tub, although it's been impossible to find lately).

    This is a modified recipe from PPK. The changes came from AJO, the person who posted Seitan Log on here. I usually just eyeball the spices, so the measurements are just estimations. I highly recommend slicing this up and making a Seitan Dip with it (serve with Au jus broth) or crumble it up in a food processor and add it to chili or tacos.

    This recipe is amazing! You may have to modify the actual cook time as my oven has issues. Making this recipe in souffle dishes really makes clean-up and serving very easy! These pies can also be made vegan with ease. I recently modified this recipe to cut back on calories and saturated fat. You may substitute a diced and peeled potato in place of the leek (cook until done with carrots). My margarine of choice is Smart Balance.

    This recipe is fantastic and the cupcakes turn out very moist because of the applesauce. My entire family raved about them! You don't have to be a vegan to enjoy these, these are also ideal for those with egg or dairy allergies. Make sure you're using trans fat free margarine like Nucoa or Earth Balance (both vegan). This recipe can easily be cut in half as well. (Update: I changed the frosting recipe due to inconsistent results. The new one is much better, in my opinion.     I made changes to the classic recipe to make this delicious vegetarian dish. Serve with brown gravy or ketchup. (1008977, come to think of it, 5 carrots does seem like a lot... I don't recall how many I used when I made it, but I believe I just used a large handful of baby carrots)

    I adapted this recipe to make it fit my dietary needs as a vegetarian. It makes a lot, but divide into sandwich sized bags and freeze for quick future meals. This cooks all day in the crock pot and makes the entire house smell amazing! NOTE: If you have a newer crock pot that cooks fast, don't let this cook all day. I made that mistake and even though it was on low, it burned my sauce. Maybe on "low" for part of the day and "warm" for the rest. Or start it on low mid-afternoon. This only applies to newer/faster cooking crock pots. I didn't have this issue with any of the previous crock pots I owned.

    This recipe comes from Linda's excellent cookbook "Home Cooking" and is one of my favorite of all time! I recommend using Morningstar Farms Grillers Original burgers and make sure the sour cream is gelatin-free if you're a vegetarian. Recipe can easily be cut in half to make about 3-4 servings.
