Can't remember on which website I got the idea for this recipe, but I added quite a few twists to it from the ingredients I had available, so I think it qualifies as a new recipe! The bacon could easily be left out to make it a vegetarian main meal.
Recipe found on Taste.com.au in my search for Low GI recipes. Tried it out and it was really good. I adjusted some of the quantities to my taste (I'm a big garlic & cheese lover), so feel free to reduce the garlic or blue cheese as it might be a bit much for some. However if you're a fan, like me, this will definitely hit the spot. The combination of flavours (cheesy polenta with sweetish mushrooms) is amazing.
Another one from Taste.com.au, but I replaced their turkey with chicken and adjusted the seasoning. Made this last night and it was a big hit with my husband. Of course he loves chicken, so he might've been a bit biased...
I had a butternut lurking in my fridge for quite some time, was eating alone and not keen on too much effort.
The it hit me - wouldn't bacon, onion & green pepper make a particularly yummy filling for it? Then my eye caught some fresh mint leaves in the bottom of my fridge, and I ended up with this fabulous blend of flavours.
The combination of the sweet butternut, the salty bacon and the mint is fantastic!
