While I was searching for an egg substitute so that I could make recipes healthier for myself, I ran into this simple and easy recipe. I found this recipe at the Care2 website @ http://www.care2.com/greenliving/flaxseed-egg-substitute.html Care2 says: Using flax seeds in place of eggs is a great vegan trick for baking, but you don’t have to be vegan to benefit from this great substitution. Flax seeds are a nutritional powerhouse and sneaking some into baked goods is an easy way to get some of their wonderful nutrients into your diet. Read on for an easy tip on how to substitute flaxseeds for eggs. Flaxseeds are rich in alpha-linolenic acid (ALA), an essential fatty acid that appears to be beneficial for heart disease, inflammatory bowel disease, arthritis and a variety of other health conditions. They also contains a group of chemicals called lignans that may play a role in the prevention of cancer. With all of this goodness, it seems like a great idea to get flax seeds into one’s diet in any way possible. One great way is to use flax seeds in place of eggs in baked goods.

Such a simple and easy dessert, what's not to love? I found this recipe at the Care2 website @ http://www.care2.com/greenliving/simple-mango-delight.html Inspired by From Bangkok to Bali in 30 Minutes, by Theresa Volpe Laursen and Byron Laursen (Harvard Common Press, 2003). Care2 says: This dessert is so laughably simple it almost doesn’t count as a recipe, but it’s so mouth-watering and so good for us–since it uses the health-promoting skin of the mango as well as the flesh–that we just had to include it! The world’s-easiest-to-make mango dessert delivers some great benefits.

Basil, Lime and Pumpkin Seed Pesto is packed with nutrition and fiber, and is so complete it doesn’t even require the tried and true Parmesan cheese!

If you like hot food, this may be for you! I found this recipe on the Care2 website @ http://www.care2.com/greenliving/fire-roasted-pepper-salsa.html In 25 Techniques for Grilling (Harvard Common Press, 2009), author Ardie A. Davis makes a compelling case for this fire-roasted pepper salsa: it makes a great appetizer over cream cheese, a delicious side dish, or a complement to grilled foods. The trick to getting the peppers really fire roasted is to have the grill grate as close to the heat source as possible. On a charcoal grill, this means putting something like bricks, hardwood, or more charcoal in the bottom of your grill, so when you dump the coals in, they will sit higher, nearer the grill grate.

Plus they freeze beautifully to enjoy on those rushed weekdays when the memory of a leisurely breakfast seems but a dream.
