    This came from The Best Light Recipe. They aren't as low calorie as most other light recipes out there, but then again their recipes don't TASTE light either and they are still lower calorie and fat than the original version. These taste awesome, and they aren't too hard to make either.

    Not your typical muffin, but they pack in 5 grams of fiber per muffin and are low calorie/fat. Oh and they taste great too! For even more fiber add the wheat germ. I make double batches and freeze half of them for down the road. Scale recipe back to 12 if you only want to make 1 muffin tray of these.

    Got this out of this month's Betty Crocker Indulgent Desserts. Haven't had a chance to make it, but it looks divine. Notes: You can use mini chocolate chips instead of chocolate-coated toffee bits. Definitely leave yourself all day to work on this, as there looks to be a lot of bake and set times. Allowing the cheesecake to cool in the oven for 30 minutes helps prevent cracking.

    Got this from a Fix it and Forget it cookbook, this is the light version. I love to make this and some Italian Peasant Bread (I like Recipe #62058) to soak up the broth. Real easy to make, just chop your celery and onions and dump it all in the crockpot.

    This recipe originally came from "Dude Food: Recipes for the Modern Guy" it is inspired by the mile high sandwich put together by Dagwood in the comic strip Blondie. This is one of my favorite recipes, it's very BIG, tasty, and filling. The sweet figs contrast well with the rest of the sandwich. I have modified it a bit, I used cream cheese in place of brie, an italian loaf in place of a long crusty roll, and I added the olive oil and oregeno. If you like this, it's probably worth checking out the cookbook which you can find at Amazon. Hope you like it.
