My Mum's recipe for biriyani. I usually cook this upto the stage where the chicken is partially cooked, the day before we have visitors. A few hours before serving I add the rice and water, cook it and pop it into the oven so that I can serve it freshly cooked. This recipe freezes well, reheat it in a covered non stick pan rather than the microwave for a fresh taste.
Make these spicy, crisp indian snacks in minutes. Stores well in an airtight container for 3 weeks. Can be made richer by adding 2tbsps butter to the dough. use an icing syringe or even a plastic bag with a hole in one corner if you don't have a murukku mould.
Simple rice appams made without the usual yeast or coconut. Idli rice is a starchy rice which is parboiled with the husk on.Use that for the cooked rice if possible, otherwise any rice except basmati will do. It has been described as a dosa on the edges with an idli in the centre!
A wonderful, economical recipe which gives both crystal clear juice and tasty jam from the same grapes. The juice turn a deep jewel like purple when you add the sugar. Makes a nice Christmas drink. Can reduce the amount of sugar to 3/4 Kg if health conscious!
