    I like my chili thick and mild with just a bit of zing and I hate the taste of pre-packaged seasoning mix so here's my own chili recipe served my favorite way...scooped over a layer of fritos corn chips and topped with shredded cheddar cheese! This reminds me of childhood! Enjoy.

    This is my own simple recipe for guacamole dip. It's an easy recipe but the flavor is just wonderful and has converted many non-guacamole eaters (like my mom who swore she hated guacamole). Every time I have made this guacamole for anyone else they either a. ask me for the recipe or b. ask me to make it again (and again, and again lol!). This is great dipping for corn chips, excellent on taco salad, adds a great flavor spread over quesadillas or tucked inside your favorite burrito. Hope you enjoy!

    Mom's recipe (not sure where it originated), for another one of my favorite comfort foods. This tasty one-dish meal is similar to a chicken pot pie filling with Jiffy cornbread baked on top. The blend of flavors in the filling mix well with the moist sweet cornbread for a delicious, simple meal. This recipe can easily be doubled but you may need to bake in two separate dishes.

    This is a hearty one-dish meal you can throw together in minutes. My family has been making it this way since I was a kid and we've always called it Jacob's Pie. Shepherd's Pie (I later learned), contains cooked tomatoes which is something we were never too crazy about as kids. I hope it reminds you of home as much as it does me!
