Easy. Healthy. Vegan. Crockpot. Yummy. How can you *not* want to make this? Credit goes to "Diana in Wisconsin" of the Simple Living Discussion Forums. The amount of servings depends on whether you're making this as a main dish or a side.

Full of the good stuff- and you get to choose what the good stuff is! This is good for people with juicers, too, because you can use your juice pulp for the pulp called for in the recipe. Credit goes to the wonderful "Diana in Wisconsin" of the Simple Living Discussion Forums. Cook time includes soak time for the oatmeal. I'm sure you could also add about 1/2 cup fruit, raisins or nuts too. These are also vegan, as long as you don't use dairy for the liquid. You can add a Tbs or two of sugar if you want a little sweetness.

Found this on the internet- it is credited to Fred Peters.

"A dietary staple of the Aztec empire, this ancient crop was 'lost' for hundreds of years, and only since the Sixties, following its rediscovery, has it been grown in the U.S. Amaranth, which has a pronounced earthy sweetness, is not a true grain, which is a nutritional plus: Unlike wheat or barley, amaranth is not deficient in the essential amino acid lysine. These tiny seeds of a weed-like plant are also a very rich source of iron, and supply copper and magnesium. And amaranth is well supplied with dietary fiber." Info from www.WholeHealthMD.com; recipe from "Vegetarian Cooking for Everyone" by Deborah Madison.

I love sweet potatoes; I love brownies. So, why not?! This recipe was put out by the Wheat Foods Council. This could easily be halved and made in an 8"x8" pan.

This is an adopted recipe. I haven't made it yet, but I will soon and will then update it with any necessary changes.

Angel food cake is often a favorite dessert of dieters because it is very low in fat. This version is even healthier because it is made with whole wheat. I adapted this version slightly from a recipe floating around the internet, but I believe the original recipe was put out by Hodgson Mill. I have not tried this, but I did compare it with other highly-rated angel food cake recipes on 'Zaar and the proportions and instructions do seem correct. Prep time does not include seperating all those eggs!!

These are like traditional peanut butter cookies, but unique in that they are flavored with maple! This was Judith Korbey's of Methuen, Massachusetts contribution to the 1958 Pillsbury Bake-Off. I got the recipe from the 50th Anniversay Best of the Bake-Off Cookbook.

This healthy (well, healthier) cookie recipe won a prize in the 1990 Pillsbury Bake-Off. It was created by by Constance Dudley of Stanardsville, Virginia. I got the recipe from the 50th Anniversary Best of the Bake-Off Cookbook. Cook time includes refrigeration time and cook time for 2 batches of cookies. These can easily be made vegan by using a vegan egg-replacer like Ener-G. Sometimes sugar is not vegan so you could substitute raw sugar, if desired.

A granita is sort of like sorbet (but icier)...sort of like a refined snow-cone. This one, with mango and raspberries, is a dazzling ruby red. Cook time is freeze time. From Better Homes and Gardens February 2002.

I'm facinated by recipes that cook with teas, so here's another! This one is from the book "Cooking with Green Tea" by Ying Chang Compestine but republished in the June '04 issue of Taste For Life magazine. **Gunpowder green tea is one of the varieties that was common in the late 18th century. It is a green tea in which the leaves have been rolled up giving it a granular appearence, leading to its name.

There's a couple recipes for tofu sour cream here on 'Zaar, but none quite like this one, so I figured I would post it. This is from the book, "How It All Vegan." It tastes surprisingly like sour cream... I mean, considering its tofu. I used basil vinegar and I think any flavored vinegar would probably be nice.

"This shake gives you one serving of vegetables, two servings of fruit, one serving of soy, one serving of ground flaxseed and one serving of whole grain (wheat bran plus wheat germ)-- plus one-third of your daily fiber. It's also delicious!" From the book "Natural Healing Guide 2002" put out by Prevention Magazine.

"The plentiful cranberries in this tart-sweet sauce contain condensed tannins, which help to combat urinary tract infections. This version has apples, sweet currants and walnuts added to the mix" - From the Prevention Magazine book, "Natural Healing Guide 2002."

"This soup contains a wealth of cold-healing foods, from garlic to carrots to chicken broth." - Adapted from the Prevention Magazine book, "Natural Healing Guide 2002" If you'd like you can do as the recipe originally stated and use uncooked instant brown rice- just add an extra cup of water to the recipe and put the rice in with the carrots. This would be easy to make vegetarian by using vegetable broth rather than chicken.

"Jazz up plain old rice with the flavors of Greece. This main-dish casserole gets powerful antioxidents from the spinach and plenty of fiber from the brown rice." - From the Prevention Magazine book, "Natural Healing Guide 2002"
