    Grandma Chiesa's Ravioli

    This recipe came from my grandma Chiesa, and is absolutely the best. I'm 63, so you can figure how old the recipe is. It's authentic except for the wonton wrappers -- she made her own ravioli dough, which you can do, too. However, my sisters and I find the wrappers to be as good as her dough was, and some ravioli dough recipes to be not half as good.

    This dish is really delicious, but is very low in fat. You can use skinned chicken thighs instead of whole chickens, which is what I prefer. The recipe is Piedmontese, and is from a book by Matt Kramer. I find it especially good when served over polenta.

    This recipe is really great. You can put it in the oven at the same time you're cooking what you want to put over it (chicken stew, sausage and tomatoes, etc.) Leftovers can be sliced the next day and sauteed in butter.
